1. Hokkien Bak Kut Teh

Bukit Merah View Market has undergo several rounds of renovation and as of the latest one,  there were many changes.  Stalls like the famous Nasi Lemak stall and the Char Siew Rice (lean/no fats yummy char siew) stall were no longer around.

The good news is that one of the famous standing stall, Hokkien Bak Kut Teh still stood sturdily at the innermost, dark corner of the hawker center.


From the photo above, one would immediately notice the soup is dark instead of the regular clear, peppery Teochew Bak Kut Teh soup that you get.  What this stall managed to get right is how it is able to nail and bring out the essence of traditional Hokkien Bak Kut Teh.  The soup has a very rich, herbal taste that leave many layer of flavour after every sip.  You can literally feel the herbs and sweet when you inhale.

As with most bak kut teh stalls, there are often inconsistency with the meat being served.  Sometimes it is too hard, sometimes there is too little meat, sometimes it is chewy and tender.

However with "Hokkien Bak Kut Teh", there is a consistency of each ribs being filled with the right amount of meat, tenderness and fats.  The meat is not too hard, nor it is too soft.  It is just nice.  Coupled with the herbal soup, you would find yourself sipping down to the last drop.

For $4.50, where can you get such goodness!
